Reed Recruitment in Colchester are currently recruiting for a Food and Beverage Manager for one of our clients based on the outskirts of Sudbury on a Permanent basis.

Main duties will include;

Venue Beverage Management main duties (as required)
• To check forthcoming events and place bar beverage orders for these events whilst meeting beverage margins as set
• To check forthcoming events and place wine allocation orders for these events as necessary
• To complete order paperwork as set out in the drinks ordering procedures
• To ensure stock rotation is carried out on a regular basis
• Cellar management
• Stock security management
• Fridge preparation for events

Venue Duties
• To be responsible for Venue bar sales performance and costs against monthly pre-set targets
• To ensure that Venue beverage costs do not exceed the pre-set budget
• To ensure good customer service levels are maintained by all bar and beverage staff with the view to exceeding expectations and achieving high sales values within the Venue
• To check forthcoming events and place beverage orders for these events as outlined in the drinks ordering procedures ensuring that these orders are an accurate reflection of the requirements of the client as outlined in their running order and associated invoices
• To place beverage orders for the bar for forthcoming events as outlined in the drinks ordering procedures ensuring that there is adequate stock to maximise bar sales without over-ordering (especially stock which has a short shelf live)
• To oversee the ordering, stock intake, stock rotation and stock taking procedures ensuring that they are carried out efficiently and on time and recorded correctly
• To be involved with beverage pricing ensuring that prices (especially when supplier prices increase) ensuring that bar prices are high enough to be in line with the pre-set budget whilst ensuring that Bar sales are also maintained and do not suffer because pricing is too high
• To assist with the implementation of changes to bar stock and beverage service with the view to increasing bar sales
• To be responsible for Bar staffing (in line with pre-set budget) taking into consideration the need for additional staff where necessary (i.e. additional evening guests, large pre-paid bar tabs) to encourage increased revenue
• To be responsible for Induction of all new bar staff to include Company standards of service, customer care and Health and Safety awareness in consultation with the Venue Manager
• To be responsible for all bar staff training, including on the job training
• To be responsible for stock takes ensuring that they are forwarded to Accounts on the first of each month and as required
• To oversee welcome drinks service, wine service and other beverage service (including bottled water and fruit juice) ensuring that it is delivered in a timely and efficient manner
• To liaise with Front of House Managers and the Venue Manager to ensure good communication and to maintain high beverage sales and high standards and to liaise with the Front of House Manager to ensure you are fully aware of the requirements of the day
